In preparation for the anniversary party tomorrow I’m making snacks today. I wanted both snacks to be healthy, they also have to be portable and require next to no setup and it ,of course, it wouldn’t hurt if they were tasty. So with that in mind, Olivia and I came up with two snacks, Spiced and Toasted Cashews and Fruit Salad with Chilli and Lime.

Classes are free all day tomorrow for the anniversary party, plus if you come in you can try out both of these snacks!

The recipes are below if you wanted to make them at home.

 

Fruit salad with chilli and lime

Ingredients
½ a honeydew melon, cubed
2 oranges, cubed
6 strawberries, thinly sliced
Juice from ½ a lime
A pinch of coarse sea salt
A pinch of chili powder

Directions
You don’t need exact measurements for this recipe because you can’t really mess it up. As a reference point, though, this is what I used to make two servings’ worth. I chopped all the fruit the night before and mixed the lime juice and chili powder in a separate bowl. Right before serving, I tossed the lime mixture with the fruit and added the salt. You could make this ahead of time, but the dressing will change the texture of the fruit the longer it sits, so keep that in mind.

Spiced and toasted cashews

Ingredients
2 cups roasted unsalted cashews
1 tablespoon olive oil
Salt and black pepper to taste
Fresh squeeze of lime

Directions
Preheat the oven to 300 degrees Fahrenheit. In a bowl mix everything except the lime. Spread the seasoned nuts onto a baking sheet and roast for 40 minutes, stirring occasionally. Once cooked, add a fresh squeeze of lime.
