I think radishes are an underappreciated vegetable. They’re often added to veggie trays at barbecues, only to be ignored. Which is a shame, because radishes are versatile to cook with, grow locally in Nova Scotia and they’re good for you—containing fibre, vitamin c and essential minerals like potassium.

Radish season is coming to an end, but you can still take advantage of it and try this green salad with radishes, cucumbers, oranges, basil and feta. This salad is a great side dish—especially in a dinner with Mediterranean flavours—or as a packed lunch.

Radish, Orange and Feta Salad
Serves 3 -5 as a side

Salad:
3 – 4 cups mixed greens
½ cup basil, shredded
2 oranges, peeled a sliced
6 – 8 radishes, sliced
2 baby cucumbers, sliced
½ cup feta cheese, crumbled
½ cup pistachios

Dressing:
¼ cup olive oil
3 tablespoons lemon juice
1 small garlic clove, chopped (optional)
Salt and pepper to taste

In a large bowl add the mixed greens then mix in the basil. Layer the rest of the ingredients on top, but wait to add the oranges until you’re ready to serve the salad. Otherwise the greens will get soggy.

Combine the dressing ingredients and set aside until right before serving. To serve just add the dressing and gently toss to combine.
